Ingredients for 4 servings:
- 300 g beetroot, raw, coarsely grated
- 200 g fennel, cut into fine strips
- 1 apple, coarsely grated
- 200 g orange(s), filleted, diced
- 2 tbsp yogurt
- 2 tbsp lemon juice
- 1 tsp honey
- tsp horseradish
- 2 tbsp rapeseed oil, cold squeezed
- some pepper
- possibly coriander
- 4 tbsp walnuts, roughly chopped, or roasted sunflower seeds
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
very tasty fresh food, the beetroot is not cooked
Combine the beetroot, fennel, and apple. Make a marinade from yogurt, lemon juice, honey, horseradish, oil, and pepper and mix with the above ingredients. Finally, fold in the orange cubes and juice, if desired. Garnish with chopped walnuts or sunflower seeds before serving. This fresh dish is ready to eat.
