Puff pastry parcels with goat cheese, walnuts, honey and rosemary

Ingredients for 12 servings:

  • 1 package of puff pastry (roll from the refrigerated section), approx. 275 g
  • 200 g goat cheese slices
  • 1 tbsp, levelled honey
  • 3 tbsp olive oil
  • 1 clove(s) garlic
  • 50 g walnuts, chopped
  • 1 tbsp rosemary, chopped, fresh or dried
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

For the filling, mash the goat cheese with the honey, chopped walnuts, crushed garlic, olive oil, and rosemary with a fork and mix. Season with salt and pepper if desired. Unroll the puff pastry and divide the rectangle into 12 equal rectangular pieces. Long pieces are best, as the filling should be placed near the edge, as the pastry will then be folded over. Place about 1 teaspoon, or a walnut-sized dollop, of the filling onto each rectangle, then fold the pastry over and press down firmly with a fork. Seal the pastries tightly, otherwise the cheese mixture will ooze out during baking. Place on a baking tray lined with baking paper and place in the preheated oven. Bake at 175 degrees Celsius (convection oven) for about 20 minutes, until the puff pastry is golden brown. They taste best when still warm. Ideal with a mixed salad, but also a great gift for a buffet or as finger food at a party. If there is any filling left over, it is great to eat on bread.
