Alphabet noodle vegetable soup

Ingredients for 4 servings:

  • 200 g soup noodles (alphabet noodles)
  • 2 carrots
  • 1 kohlrabi
  • 1 liter vegetable broth
  • 300 g peas, fresh, split or frozen
  • 4 tbsp mixed herbs, finely chopped (chervil, flat parsley, chives)
  • some salt
  • some black pepper, freshly ground
  • some nutmeg, freshly grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

vegetarian

Cook the alphabet noodles in plenty of boiling, lightly salted water until al dente, then drain and set aside. Trim, peel, and rinse the carrots and kohlrabi. Thinly slice the carrots and cut the kohlrabi into thin sticks. Bring the vegetable stock to a boil in a saucepan and cook the carrots and kohlrabi for about 10 minutes. Then add the peas and cook for about 5 minutes. Then add the alphabet noodles and heat them into the soup. Stir in the herbs and season the soup with a little salt, a few grinds of freshly ground black pepper, and a little freshly grated nutmeg. Serve with toasted slices of toast with herb butter.
