Bulgur vegetable pan

Ingredients for 2 servings:

  • 150 g bulgur
  • 1 shallot(s)
  • 1 pepper, red or green, core removed
  • 1 green bell pepper(s), core removed
  • 1 beef tomato(s), core removed
  • 1 carrot(s)
  • 1 small can of corn
  • 6 black olives, cut into rings
  • 1 garlic clove(s)
  • 4 tbsp rapeseed oil or olive oil
  • 300 ml meat broth or vegetable broth
  • Parsley, chopped
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the bulgur using the meat broth according to the manufacturer’s instructions, or let it swell. Meanwhile, clean and finely dice the vegetables. Sauté the diced onion and pepper in hot rapeseed oil until lightly golden. Now add the remaining vegetables and sauté for 5 minutes. Mix the cooked bulgur into the vegetables until the broth has been absorbed. Add chopped parsley and season gently with salt and pepper. Serve hot. Grilled lamb steaks go perfectly with this dish. It’s also great served cold as a salad the next day.
