Carrot and green spelt patties

Ingredients for 4 servings:

  • 125 g green spelt, crushed
  • 200 ml water
  • 1 tbsp, leveled vegetable broth
  • 500 g carrot(s)
  • 1 onion(s)
  • oil
  • 25 g sesame seeds
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

In a pot, mix the green spelt with the boiling water and vegetable stock. Let it swell over low heat for 20 minutes. Meanwhile, finely grate the carrots, finely dice the onion, and sauté in a pan with hot oil. Then mix the green spelt, sesame seeds, and onion with the carrots well and season with salt and freshly ground pepper to taste. Form 12 patties from the mixture and place them on a baking sheet lined with baking paper. Bake in a preheated oven at 200°C for 30 to 40 minutes. Tips: Toast the sesame seeds in a pan without fat! Drain or squeeze out very moist grated carrots.
