Asparagus and strawberry salad

Ingredients for 1 servings:

  • 8 stalk(s) asparagus, fresh
  • 10 strawberries, sorted
  • 1 handful of arugula
  • 4 tbsp stock (asparagus stock)
  • 2 tbsp olive oil, very good
  • 1 tsp, heaped sugar, brown
  • 1 pinch(s) Fleur de Sel (Fleur de Sel Lime)
  • 2 tsp Balsamic vinegar (apricot balsamic vinegar)

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Combine the dressing ingredients and whisk until creamy. Wash and peel the uncooked asparagus, then slice diagonally into thin slices. Add the asparagus slices to the dressing and let it marinate for at least an hour. Wash the strawberries, remove the stems, and slice them thinly, roughly the same size as the asparagus. Wash, dry, and roughly chop the arugula. Add the strawberries and arugula to the asparagus, mix, and serve nicely.
