Vegan strawberry and kohlrabi salad

Ingredients for 2 servings:

  • 1 kohlrabi, peeled 280 – 300 g
  • 300 g strawberries
  • 2 tbsp olive oil
  • 1 tsp, levelled black pepper, freshly ground
  • ½ lemon(s)

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

GAT-compliant, fresh summer salad with lemon vinaigrette

Peel the kohlrabi and cut into thin sticks. Wash the strawberries, remove the green parts, and halve or quarter them depending on their size. Place both in a bowl. Add the juice of half a lemon, the olive oil, and the freshly ground pepper. Mix everything well. Let the salad sit at room temperature for 30 minutes. If you like, add a little agave syrup for extra sweetness.
