Three kinds of tomato snack

Ingredients for 6 servings:

  • 500 g cocktail tomatoes
  • 100g mozzarella
  • 100 g sheep’s cheese
  • 1 medium-sized egg(s), hard-boiled
  • 1 tsp mayonnaise
  • ½ bunch parsley
  • Salt

Instructions

Cut a small top off the tomatoes at the base of the stem. Carefully hollow out the tomatoes with an espresso spoon and place them open-side up on a kitchen towel to drain. Finely chop the mozzarella. Finely chop the parsley and add half to the mozzarella with salt and mix. Finely mash the feta cheese with a fork and mix with the other half of the parsley. Do not add salt, as the feta cheese is salty enough. Peel the hard-boiled egg and chop it finely, mix with the mayonnaise, and add a little more salt if necessary. Using a small spoon, fill the drained tomatoes with the mozzarella mixture. Do the same with the feta cheese and egg mixture. Serve the tomatoes as an appetizer, snack, side dish, or on a buffet. It’s also very popular with children.
