Oat and pine nut cookies

Ingredients for 1 servings:

  • 250 g butter
  • 150 g sugar
  • 2 eggs
  • 125 g wholemeal spelt flour
  • 1 packet of baking powder
  • 250 g oat flakes, fine
  • 1 pinch of salt
  • 1 pinch of saffron, to taste
  • 75 g pine nuts
  • 50 g dark chocolate

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Beat room-temperature eggs, softened butter, sugar, salt, and, if desired, saffron until fluffy. Mix the flour and oats with the baking powder and add to the mixture. Fold in the pine nuts and grated chocolate. Using two teaspoons, drop about 50 balls of dough onto two greased baking sheets. I made 4 x 6 cookies per sheet. Bake in an oven preheated to 180°C (fan oven) or 200°C (top/bottom heat) for about 15 minutes on the middle shelf. The cookies will spread slightly. Allow to cool briefly on the baking sheet, then carefully remove them and cool completely on a wire rack. Best stored in a tin. The cookies are not that sweet and the pine nuts and, if desired, the saffron give them a special flavor.
