Ingredients for 4 servings:
- 1 kg carrot(s)
- 1 kg leaf spinach, fresh
- 1 onion(s), finely diced
- 1 garlic clove(s)
- 2 tbsp sunflower seeds
- 4 tbsp olive oil
- Sea salt and pepper, to taste
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes
Peel the carrots. Finely dice the onions and garlic. Wash and trim the spinach. First, dry-roast the sunflower seeds in a pan, then remove them. Now fry the onions in olive oil. Then add the spinach leaves, turning occasionally, and season with garlic, pepper, and salt. Meanwhile, spiralize the carrots into spaghetti. After one to two minutes, the spinach is ready. Now add the carrots to the pan. Toss well and serve on a pasta dish. Finish with the roasted sunflower seeds. Done.
