Ingredients for 1 servings:

  • 700 g zucchini
  • 140 g avocado(s)
  • 150 g tomatoes
  • ½ lemon(s)
  • 1 bunch of spring onions
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

vegan zucchini noodles with avocado-tomato cream

To make the pasta, use a vegetable peeler or spiralizer to cut the zucchini into noodles. Heat the zucchini noodles in a pan or saucepan over low heat. Peel the avocado and blend it with the lemon juice until creamy. Finely dice the tomato and spring onion and toss them into the pan with the avocado cream. Season with salt and pepper to taste and serve.
