Ingredients for 2 servings:
- 500 g tomatoes
- 2 balls of mozzarella (125 g each)
- Butter for the mold
- 1 tbsp pesto
- 2 garlic cloves
- 1 ½ tbsp olive oil
- Salt
- 1 chili pepper(s), yellow
- 2 spring onions
- Basil for garnishing
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Preheat the oven to 180-200 degrees Celsius (350-400 degrees Fahrenheit) top/bottom heat. Wash the tomatoes, drain the mozzarella, and slice both. Grease a baking dish and layer the tomatoes and mozzarella. Peel the garlic cloves and deseed the chili pepper. Dice both and scatter over the ingredients in the dish. Drizzle with pesto and olive oil, sprinkle with a little salt, and bake for 15-20 minutes. Finely slice the spring onion and scatter it over the gratin. Garnish with basil leaves and serve immediately.
