Spinach frittata from the tray with feta cheese and tomatoes

Ingredients for 6 servings:

  • 8 eggs
  • 3 tbsp milk
  • ½ tsp salt
  • Pepper, freshly ground
  • Nutmeg, freshly grated
  • ½ cup parsley, chopped
  • 800 g leaf spinach, blanched
  • e.g. feta cheese
  • 4 tomatoes, peeled, quartered
  • Grease for the tray

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

makes 1 tray

Preheat the oven to 250°C fan/convection oven. Grease a non-stick baking sheet well and let it warm in the preheated oven for about 5 minutes. Whisk the eggs with the milk and spices. Pour the egg wash onto the baking sheet. Spread the spinach, feta cheese, and tomatoes on top and bake in the preheated oven at 220°C fan/convection oven for about 10 minutes.
