Bacon substitute made from smoked tofu

Pat the tofu block dry and dice it into small pieces, along with the onions. Mix the onion and tofu cubes and toss them in the spices. Heat the oil in a pan and fry the bacon thoroughly in 2-3 batches over high heat, stirring occasionally. This takes about 5-10 minutes per batch. Cool in a bowl and let rest for about 1-2 hours. The bacon will keep in the refrigerator for a few days. Works best with firm tofu. Alnatura’s smoked tofu is too crumbly; I find that Dennree works best.
