Ingredients for 2 servings:
- 1 m.-sized sweet potato(s)
- 1 can coconut milk
- 2 tsp curry powder
- salt and pepper
- 2 cups vegetable broth
- 1 cup rice

Peel the sweet potato and cut into julienne strips. Pour the broth into a saucepan, add the rice, and bring to a boil over low heat. The broth will evaporate completely, so stir the rice more frequently toward the end to prevent it from burning. Meanwhile, bring the sweet potato strips and coconut milk to a boil in a saucepan, stirring occasionally. When the sweet potato is soft, season with curry powder, salt, and pepper. Cooking time: approximately 20-30 minutes. When the rice has evaporated, serve.
