Vegetable oat stew

Ingredients for 2 servings:

  • 150 g fine oat flakes
  • 1 can of tomatoes, chopped
  • 1 can of corn
  • 1 can of mushrooms
  • 200 g snow peas
  • n. B. Oil
  • e.g. olive oil
  • e.g. Balsamic vinegar with low acidity; vegan if required
  • e.g. beet syrup
  • n. B. sugar
  • n. B. Salt
  • e.g. basil, dried

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cut the snow peas into bite-sized pieces and fry briefly in a little oil in a pan. Add the tomatoes, corn, and mushrooms (with their liquid) and bring to a boil. Now add fruity olive oil, if desired. Season to taste with balsamic vinegar, beetroot syrup, sugar, salt, and basil, in that order. Finally, add the oats and simmer for a few minutes to allow the oats to swell.
