Basic recipe for sweet or savory muffins to vary according to your mood
Preheat the oven to 180°C (160°C fan-assisted). Place one paper baking cup into each muffin tin, or stack three paper baking cups on a regular baking sheet. Melt the butter over low heat, then combine the flour and baking powder. Whisk the eggs with the crème fraîche (or sour cream, or yogurt), sugar, or salt, then stir in the melted butter. Quickly stir in the flour mixture. This all works very well by hand; no mixer is needed! Pour the batter into the baking cups and bake for 20-25 minutes.
