Spelt herb muffins

Ingredients for 12 servings:

  • 200 g flour (spelt flour)
  • ½ tsp baking powder (cream of tartar)
  • 1 pinch of salt
  • Pepper from the mill
  • 1 pinch(s) thyme, dried
  • 1 pinch(s) rosemary, dried
  • 1 pinch(s) basil, dried
  • ½ tsp parsley, chopped
  • 30 g Parmesan, grated
  • 2 eggs
  • 50 g butter in flakes

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sift flour and baking powder, then mix in salt, pepper, herbs, and cheese. Make a well in the center, add the eggs, and mix with a little flour. Sprinkle with butter and knead all ingredients into a smooth dough. Let rest for 35 minutes. Grease a muffin tin and refrigerate. Preheat oven to 200°C (180°C fan oven, gas mark 3-4). Shape the dough into 12 balls and place them in the tin. Bake the muffins for 20-25 minutes.
