Broccoli soup

Ingredients for 4 servings:

  • 2 large onions
  • 2 cloves garlic
  • 1 pinch(s) of turmeric
  • 2 stalk(s) spring onions
  • 1 head of broccoli
  • 1 large carrot(s)
  • 1 bay leaf
  • 1 liter of water, preferably vegetable or meat broth
  • some salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Simple and low in calories

First, fry the onions in a little oil. Season them with turmeric, and after briefly frying, add the garlic cloves until golden brown. In the meantime, chop and wash the spring onions, carrots, and broccoli. Add these to the onions. Pour water/stock over the vegetables. You can also add a bouillon cube (very tasty)! Season with salt and pepper and cook until the vegetables are tender. Once tender, purée the soup. But it also tastes great unpureed.
