Vegan celery soup

Ingredients for 3 servings:

  • 350 g celeriac
  • 125 g potatoes
  • 50 g onion(s), red
  • 1 apple
  • 15 g margarine
  • 450 ml vegetable stock
  • 200 g oat cream (oat cream cuisine)
  • some salt and pepper
  • lemon juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel and finely dice the celeriac, potatoes, apple, and onion. Heat the butter in a saucepan and sauté all the diced ingredients over medium heat for about 8 minutes. Deglaze with the vegetable stock. Cover and simmer over medium heat for 20-30 minutes. After about 10 minutes, add the oat cream. Then puree everything with a hand blender until smooth. Season to taste with salt, pepper, and 1-2 tablespoons of lemon juice.
