Pizza with tomatoes and cheese on spinach dough

Ingredients for 2 servings:

  • 400 g spinach, fresh (frozen spinach also works)
  • 2 eggs
  • 150 g cheese, grated
  • 2 tomatoes
  • 1 ball of mozzarella
  • 1 clove(s) garlic, grated, optional
  • salt and pepper
  • nutmeg
  • marjoram

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Low-carb

Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit). Wash the spinach and then puree it (using an immersion blender or blender), then squeeze out some of the excess water. Add the eggs, 50g of cheese, garlic, nutmeg, salt, and pepper, and puree again. Pour the mixture onto a baking sheet lined with baking paper and spread it out to a thickness of about 0.5 cm (0.20 inches). Place in the oven and bake for about 30 minutes. Chop the tomatoes and mozzarella, mix (drain off any liquid that forms), and then spread it on the spinach pizza base. Sprinkle with the remaining grated cheese and marjoram, if desired, and bake for another 10 minutes.
