Date-sesame bars

Ingredients for 1 servings:

  • 400 g dates (raw quality)
  • 2 bags of light sesame seeds
  • 200 g dried apricots, unsulphured

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 hours; Total time approx. 10 hours 30 minutes

Soak the dates in water for about 6 hours and let them swell. Chop the apricots into very small pieces; this works better with a knife, as they stick to the blades in a blender. Place the swollen dates in a blender (Vitamix or Thermomix) and puree. Add the sesame seeds and mix with the apricots in the food processor. Pour the mixture onto baking paper-lined trays of the dehydrator and smooth it out. Then cut into bars, diamonds, or squares with a knife and dry for 1 to 2 days at 35 to max. 40 degrees Celsius (95 to 104 degrees Fahrenheit) – raw food quality. Then store in a ceramic pot. Note: If you don’t want raw food quality, you can also dry them in the oven. To do this, wedge a wooden spoon in the oven door and dry until the desired quality is reached; this should take 10 hours in the oven.
