Ingredients for 4 servings:

  • 500g spaghetti
  • 150 g walnuts, finely chopped
  • 120 ml olive oil
  • 3 cloves garlic, finely diced
  • 100 g breadcrumbs
  • 1 tbsp parsley, flat, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Spaghetti alla Fornaia – a recipe from Livorno

Place the spaghetti in boiling salted water. Meanwhile, fry the chopped walnuts and diced garlic in half of the olive oil, add the breadcrumbs, and let them brown. By now, the spaghetti should be done. Drain, transfer to a warmed bowl, toss well with the breadcrumbs, the remaining half of the olive oil, and the chopped parsley, and serve immediately.
