Oriental summer salad with sesame dressing

Ingredients for 2 servings:

  • 3 tbsp oil (sesame oil)
  • 2 tbsp balsamic vinegar, white
  • 1 tbsp sesame seeds (amount to taste)
  • some water
  • ½ cucumber(s)
  • ½ avocado(s)
  • 2 tomatoes
  • 4 mushrooms
  • 1 small onion(s)
  • ½ bunch chives
  • Cress and/or fresh parsley
  • salt and pepper
  • Sambal Oelek

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Briefly roast the sesame seeds in a non-stick pan without fat until they turn a golden yellow to light brown. Peel the cucumber, quarter it lengthwise, and cut into small pieces. Do the same with the avocado. Finely chop the tomatoes and mushrooms, and dice the onion. Roughly chop the chives and parsley. Add the cress and mix everything well in a bowl. Now drizzle the sesame oil and vinegar over the salad and season with salt and pepper. Pour in a little water and mix everything well again. If you like it a bit spicier, you can also add a little (about 1-2 teaspoons) of sambal oelek. Let the salad sit for 5-10 minutes, then enjoy with warm flatbread and a light white wine. These are just estimates of the dressing ingredients; feel free to adjust them to your taste.
