Apple cream cake a la Mäusle

Ingredients for 1 servings:

  • 4 medium-sized apples, sweet/crumbly
  • 100 g butter, very soft
  • 250 g brown sugar (raw cane sugar)
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 4 egg yolks
  • 200 ml cream
  • 1 tsp, smothered cinnamon
  • 250 g spelt flour, fine
  • 1 pack of cream of tartar baking powder
  • 100 g raisins (add more or leave out altogether if desired)
  • possibly water
  • Butter, for the mold

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 15 minutes

Peel the apples, halve them, quarter them, remove the cores, halve the quarters again lengthwise, and cut them into small pieces (net weight = approximately 500 g). Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Place a piece of baking paper into the bottom of a 26 cm diameter springform pan. Grease the edges well with butter. Mix the butter with the sugar, vanilla sugar, egg yolks, and salt. Add the cream and stir vigorously until the sugar dissolves. Combine the spelt flour with the cream of tartar and cinnamon and stir quickly until a smooth dough forms. Add a splash of water if necessary. Then fold in the apple pieces and raisins and pour the batter into the prepared pan. Smooth the surface, pressing any protruding apple pieces into the batter. Bake for about 45 to 50 minutes (test with a skewer). Cover with aluminum foil if necessary. Serve with whipped unsweetened cream.
