Ingredients for 1 servings:

  • 1 kg quark (low-fat)
  • 10 eggs
  • 150 g sugar substitute (Xucker)
  • 10 drops flavoring (vanilla)
  • 1 packet of baking powder
  • 1 packet of pudding powder (vanilla)
  • 1 tbsp oil
  • 10 drops flavoring (lemon)

Working time approx. 20 minutes; Total time approx. 20 minutes

Cheesecake without a base and with reduced carbohydrates

Combine the quark, egg yolks, oil, Xucker, vanilla extract, lemon flavoring, vanilla pudding, and baking powder in a bowl and mix until creamy. Whisk the egg whites until stiff peaks form. Fold into the quark mixture and pour into a cake pan (lined with baking paper beforehand). Bake on the middle rack of the oven at 170°C for 60 minutes. Place a baking sheet over the cake to prevent it from overcooking. After baking, let it cool completely and turn it out to serve, as the top layer is very firm. Tastes delicious lukewarm.
