Ingredients for 4 servings:
- 60 g virgin coconut oil, room temperature
- Coconut oil for greasing
- 40 g erythritol (sugar substitute)
- 80 g coconut flour
- 10 g psyllium husks
- 1 pinch(s) of rock salt or sea salt, freshly ground
- 1 tsp Bourbon vanilla powder as needed
- 2 tsp, heaped cream of tartar baking powder
- 240 ml coconut milk or other plant milk without added sugar
- e.g. raspberries or blueberries
- e.g. coconut yogurt (yogurt alternative), natural, with a few drops of stevia

In a bowl, mix the room-temperature coconut oil and erythritol with a fork until soft. In another bowl, mix the coconut flour, psyllium husk, vanilla, cream of tartar, and salt with a tablespoon. Then add this flour mixture to the bowl with the coconut oil and erythritol and mix with a fork until the consistency resembles wet sand. Add the slightly warmed—or at least room-temperature—plant milk and stir. I find coconut milk or a mixture of coconut milk and almond milk works best. Let the dough stand for about three minutes, stirring occasionally, until the milk is absorbed and there are no more lumps. The dough will be quite thick. Then, using your hands, shape the dough into four balls, each weighing about 100 g. Preheat the waffle iron thoroughly. Then grease the waffle iron with 1 teaspoon of coconut oil. Place one ball of dough slightly above the center. Close the waffle iron and press firmly until the batter fills the waffle iron completely. Then release and bake on high for about four minutes, until the waffle is browned. Let the waffle cool for a minute to firm up. Finally, top with your desired topping. I like it best with berries and natural coconut yogurt with a few drops of stevia. Note: The batter balls will keep in the refrigerator for up to three days. One waffle is a filling breakfast. 220 kcal per serving.
