Chocolate nut pudding with chia seeds and psyllium husks

Ingredients for 4 servings:

  • 1 handful of nuts, e.g. peanuts or walnuts
  • 12 g psyllium husks
  • 18 g chia seeds
  • 8 tsp cocoa powder, pure
  • 6 tsp vanilla sugar
  • 500 ml milk or 450 ml milk and 50 ml cream

Working time approx. 5 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 5 minutes

Crack the nuts and place the kernels, cocoa powder, sugar, chia seeds, and psyllium husks in a blender and blend until smooth. Slowly pour in the milk or milk-and-cream mixture and mix well for a few minutes. Pour into four suitable glasses, such as ice cream cups, and refrigerate for a while. The mixture will thicken over the next few hours. The pudding also tastes good with almond milk. If the pudding is too thick or too thin for your taste, you can vary the amount of milk.
