Potato and mushroom puree

Ingredients for 2 servings:

  • 500 g potatoes
  • 300 g mushrooms
  • 1 small onion(s)
  • 150 ml water, approx.
  • some olive oil or rapeseed oil
  • salt and pepper
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

vegan

Peel and dice the potatoes. Scrub the mushrooms. Peel and dice the onion. Simmer for about 15 minutes, then puree and season to taste. Finally, stir in the oil and parsley.
