Vegan simple mashed potatoes

Ingredients for 3 servings:

  • 700 g potatoes
  • 100 ml soy milk (soy drink)
  • 100 g margarine
  • Salt
  • e.g. nutmeg, freshly grated

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

I like to use waxy potatoes, as the mash is a bit firmer than with floury potatoes, so everyone has to find their own preference. Peel the potatoes and cut them into cubes. Boil in salted water for about 15-20 minutes, until tender. Drain the potatoes. Heat the soy milk and vegetable margarine in the microwave. If you use cold margarine, the mash can become a little sticky. Then add the soy milk and margarine to the potatoes and mash thoroughly. To prevent the consistency from becoming sticky, don’t mash for too long. If you like, add parsley, chives, and/or fried onions. Season with salt and nutmeg.
