Quick oven-baked tomatoes

Ingredients for 2 servings:

  • 500 g cherry tomatoes
  • e.g. olive oil
  • salt and pepper
  • Garlic
  • Herbs, dried

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Grease a baking dish with a little olive oil. Preheat the oven to 200°C. Wash and halve the tomatoes. Place the tomato halves close together in the baking dish, cut-side up. Season generously with salt and a little pepper. Sprinkle with freshly ground garlic and herbs. Drizzle with another dash of olive oil. Cook on the floor of the oven (with a rack between them) for about 20 minutes. The tomatoes can brown a little, but be careful not to burn. Delicious on their own, or cold as a side dish. If you don’t have dried garlic, use fresh, although it burns more easily than dried. The herbs you use are up to you; I used Herbes de Provence, but others will work too.
