Grain crispbread with chia seeds

Ingredients for 1 servings:

  • 125 g oat flakes
  • 125 g wheat flour type 1050
  • 100 g grains (6-grain mix)
  • 350 ml water
  • 60 g chia seeds
  • 50 g sesame seeds
  • 10 g black cumin
  • 4 tsp spice mix (zatar)
  • 1 tsp salt

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 40 minutes

Mix the 6-seed mixture with the water and let it soak for at least 30 minutes. Mix the remaining ingredients in a bowl. Now add the seed mixture and water to a blender or smoothie maker and blend briefly to break down the seeds a bit. Add the seed mixture to the remaining ingredients and mix well. Line a baking sheet with baking paper and spread the mixture evenly. This works best with a moistened silicone rolling pin. Cut into small triangles using a pizza cutter and bake in a preheated oven at 150 degrees Celsius (convection oven) for about 40-50 minutes. Once cooled, break apart along the pre-cut edges. Store in an airtight container or eat immediately.
