Pan-fried vegetables with feta

Ingredients for 4 servings:

  • 1 garlic clove(s)
  • 2 onions
  • 4 small zucchini
  • 2 red peppers
  • 1 tbsp olive oil
  • 4 tbsp tomato paste
  • 200 ml vegetable stock
  • 200 g feta cheese
  • 1 sprig(s) rosemary
  • 5 basil leaves
  • 2 sprigs of thyme
  • a little parsley
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Peel and chop the onions and garlic clove. Finely chop the rosemary, thyme, basil, and parsley. Dice the zucchini and finely slice the bell pepper. Heat the oil in a pan and sauté the chopped onions. Then sauté the garlic, bell pepper, and zucchini. Deglaze with vegetable stock and stir in the tomato paste. Season to taste. Simmer for 15 minutes. Crumble the feta and mix it into the vegetables. Let it simmer for another 5 minutes over low heat and serve immediately.
