Spinach and egg pizza

Ingredients for 6 servings:

  • 150 g quark
  • 6 tbsp milk
  • 6 tbsp oil
  • 300 g flour
  • 1 packet of baking powder
  • 1 pinch of salt
  • 400 g spinach, frozen
  • 4 eggs
  • some cheese, grated
  • 2 tbsp cream
  • 4 tbsp crème fraîche
  • e.g. salt and pepper
  • nutmeg

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 30 minutes

Preheat the oven to 170°C fan/convection oven. Make a dough from the quark, milk, oil, flour, baking powder, and a pinch of salt and roll it out. Thaw the spinach and squeeze out any excess liquid. Mix the crème fraîche with the cream and season generously with pepper, salt, and nutmeg. Spread the mixture on the pizza dough. Sprinkle the spinach over the dough and season to taste. Sprinkle with grated cheese. Bake in the oven for 10 minutes. Then crack the eggs onto the pizza like fried eggs and bake for another 10-15 minutes.
