Black Forest Parfait

Ingredients for 4 servings:

  • 4 eggs, including the yolk
  • 2 tsp powdered sugar
  • 120 g chocolate coating
  • 2 cl cherry brandy
  • 200 ml cream

Instructions

Working time approx. 20 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 20 minutes

Slowly melt the chocolate over a pan of hot water. Meanwhile, beat the egg yolks with the sugar until white and creamy. Whip the cream (preferably organic cream, as it will stiffen). Let the melted chocolate cool slightly, stirring constantly, then slowly stir in the egg mixture. Stir in the kirsch. Finally, fold in the stiff cream. Line a baking dish with foil, pour the parfait into it, and freeze for 6 hours. If you’re leaving it in for longer, refrigerate it two hours before serving. Plate the parfait and decorate with whipped cream, cherries, cherry juice, and shaved chocolate.
