delicious snack

Cook the potatoes in salted water until soft. While still warm, pass them through a food mill. Stir in the flour and let cool. Mix the chives and grated cheese into the potato mixture and season with pepper. Roll the dough into a roll on a lightly floured surface and divide into about 16 pieces. Flatten each piece slightly and place a cheese cube in the center. Then form into balls, ensuring the cheese is nicely centered. Coat the balls in breadcrumbs and fry in a frying pan with a little oil until crispy all over. Serve immediately. Makes about 16 pieces. Delicious on lamb’s lettuce or with a light quark dip.
