Stuffed potato wedges

Ingredients for 4 servings:

  • 500 g potatoes (peeled)
  • 1 egg(s)
  • 100 g breadcrumbs
  • 100 g cream cheese with herbs
  • 1 tbsp oil

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Boil potatoes in lightly salted water until soft, then drain and mash. Knead with the egg and 3 tablespoons of breadcrumbs until smooth. Form 8 balls from the potato dough, make a hollow in each, fill with a teaspoon of cream cheese, and reseal. Roll in the remaining breadcrumbs and gently press down on the work surface to form potato wedges. Fry potato wedges in a pan with hot oil until golden brown on all sides. Serve stuffed potato wedges on top of a crisp salad, for example, or as finger food for your guests.
