Rhubarb and apple crumbles

Ingredients for 2 servings:

  • 5 stalk(s) rhubarb, washed and cut into bite-sized pieces
  • 1 apple, washed and cut into pieces, remove core but do not peel
  • 1 orange(s), zest and juice
  • 1 tsp vanilla powder
  • 1 tsp honey
  • 1 pinch(s) cardamom
  • 4 tbsp spelt flakes
  • 2 tbsp nuts, ground
  • 1 tbsp coconut flakes
  • 25 g butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Place the apple and rhubarb pieces in a baking dish, mix with the orange juice and zest, honey, cardamom, and vanilla powder. Bake in the oven at 150°C for 30 minutes. Mix the butter with the coconut flakes and ground nuts to form crumbs. After the 30 minutes of baking, sprinkle these over the fruit. Return everything to the oven for another 20 minutes. This delicious dish is served with homemade blueberry mint ice cream.
