Briefly fried red cabbage with balsamic vinegar

Ingredients for 2 servings:

  • 250 g red cabbage
  • 2 tbsp pistachios, unsalted
  • 2 tbsp sugar
  • 2 tbsp balsamic vinegar
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cut the red cabbage into thin strips, preferably wearing gloves. If your fingers are red because you don’t have gloves, you can clean them with lemon juice. Heat the oil in a pan. Add the red cabbage and pistachios to the pan and dust with sugar. Sauté the cabbage for about 15 minutes over medium heat, then deglaze with the balsamic vinegar and continue simmering until the balsamic vinegar has reduced. Season the red cabbage with salt and pepper to taste. We ate the salad either lukewarm or cold, but it’s probably delicious warm too.
