Couscous with cashews

Ingredients for 2 servings:

  • 200 g cashew nuts
  • 150 g couscous
  • 3 tbsp olive oil
  • 1 tbsp, sautéed cumin
  • 1 tsp cinnamon powder
  • e.g. salt and pepper
  • 1 tbsp lemon juice
  • e.g. spring onion(s)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cook the couscous as usual for about 15 minutes and then let it cool slightly. Roast the cashews in a non-stick pan without oil. Slice the spring onions into small rings. Mix together the olive oil, lemon juice, and spices. Add the couscous, cashews, and spring onions. Mix everything together and season with salt and pepper. Delicious both hot and cold.
