Basic recipe for cakes and muffins

Ingredients for 1 servings:

  • 125 g butter, soft
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 200 g flour
  • ½ pack of baking powder
  • 1 cup of milk, small, approx. 150 ml

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 40 minutes

Cream the butter and sugar until creamy, then add the vanilla sugar and mix. Then gradually mix the eggs into the butter and sugar mixture. Mix the flour with the baking powder and add a small amount to the butter and sugar mixture. Then add a portion of the milk. Continue to stir in the rest of the milk and flour alternately. The batter can now be refined with whatever you like, e.g. nuts, cocoa, Nutella, fruit, etc. – but it tastes delicious and light as it is! I bake this batter as a cake at 180°C (convection oven) for about 30 minutes (test with a wooden skewer). Muffins cook quicker, about 10 minutes. After baking, let the cake cool and, if desired, refine it with icing, chocolate glaze, or powdered sugar.
