Peel the mango and roughly chop the flesh. Peel the fresh pineapple and cut into pieces. Remove 3 tablespoons of the flesh. Peel the banana and cut into 2-3 pieces. Place the soy yogurt and fruit in a blender. Refine with a little vanilla extract and sweeten with agave syrup to taste. Add vanilla-flavored soy or almond milk if desired, depending on your preferred consistency. If using only yogurt, it can be spooned out of a bowl. Adding almond milk or something similar makes it more liquid and can be drunk straight from a glass. Tip: Prepare the fruit in the summer and freeze it briefly. Then add it to the blender with the other frozen ingredients. This makes a very refreshing meal in hot weather. Garnish with desiccated coconut or something similar.
