Ingredients for 2 servings:

  • 1 large onion(s), coarsely chopped
  • 3 garlic cloves, finely chopped
  • 2 tbsp oil
  • ½ tsp cumin powder
  • ½ tsp cinnamon powder
  • ½ tsp ginger powder
  • 2 red chili peppers, chopped
  • ½ cup vegetable broth
  • 200g tofu
  • 240 g tomatoes, chopped (canned or fresh)
  • 1 small can of chickpeas (240 g)
  • ½ tsp salt
  • 1 tbsp parsley, chopped
  • 125 g rice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cook rice according to the package instructions. Cut the tofu into small cubes and fry in a nonstick pan in 1 tablespoon of oil until golden brown, then remove from the pan and set aside. Add the onion and garlic to the pan and fry with the second tablespoon of oil until golden brown. Add all the spices, the chickpeas, and the tomatoes, and simmer gently for about 5 minutes. Turn off the heat, stir in the fried tofu cubes, and sprinkle with parsley. Serve over the rice.
