Sweet green Couscous – Green couscous with a sweet note

Ingredients for 2 servings:

  • 100 g couscous
  • 40 g peas, frozen
  • 40 g almond sticks
  • 60 g dates
  • ½ bunch mint
  • 2 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Prepare the couscous according to the package instructions. Soak the peas in boiling water for 2 minutes. Then drain. Toast the almond slivers in a pan without oil. Cut the dates into thin strips. Pluck the mint leaves from the sprigs and chop finely. Mix all ingredients into the couscous. Add the oil and season with salt and pepper.
