Scrambled eggs in a nest

Ingredients for 4 servings:

  • 4 slices of sandwich toast
  • 4 eggs
  • 3 tbsp diced ham
  • salt and pepper
  • a few stalks of chives
  • some butter or margarine

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Lightly grease four muffin tins and preheat the oven to 200°C (top/bottom heat). Cut out large circles from the slices of toast. You can use a large can of food to help you. Flatten the circles with a rolling pin and then press them into the tin. There should now be four small “bowls” in the tin. Now distribute the ham cubes among them, reserving a few more for later. Whisk each egg separately in a small bowl, season with salt and pepper, and pour one egg into each tin. Sprinkle a few ham cubes over the top. Now place in the oven for about 20-25 minutes, but keep an eye on them, as every oven bakes differently. When the muffins are ready, arrange them on plates and sprinkle with washed and finely chopped chives.
