Ingredients for 2 servings:

  • 1 red bell pepper(s)
  • 1 zucchini
  • 3 small onions
  • 300 g tofu, natural
  • 3 tsp oil
  • Salt
  • 200 ml vegetable stock
  • Cayenne pepper
  • 2 tbsp tomato paste
  • 2 tsp soy sauce
  • 60g baguette(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Clean the bell peppers, quarter them, and cut into 3 cm pieces. Clean the zucchini, halve them lengthwise, and cut them into 1 cm thick slices. Cut 2 onions into 6 wedges each. Finely dice 1 onion. Cut the tofu into pieces approximately 2.5 cm large and 1 cm thick. Alternate the bell peppers, zucchini, onion wedges, and tofu on the shish kebab skewers. Heat 1 teaspoon of oil in the pan. Fry the skewers for 3-4 minutes until light brown, then season with salt and remove from the pan. Add another 2 teaspoons of oil to the pan and sauté the diced onions until translucent. Add tomato paste and sauté over low heat for 1 minute. Add the stock, bring to a boil, and season with cayenne pepper and soy sauce. Add the skewers to the sauce, cover, and heat for 5 minutes. Serve the skewers with the sauce and fresh baguette.
