Ille's light and delicious tuna and tomato salad

Ingredients for 2 servings:

  • 1 can of tuna in oil (important for the flavor!)
  • 500 g tomatoes, firm and tasty
  • 2 onions
  • 1 pinch(s) garlic powder or garlic salt
  • 2 tbsp corn
  • 2 tbsp peas, frozen
  • 1 tbsp balsamic vinegar, lighter
  • 1 lemon(s)
  • salt and pepper
  • Tomato seasoning or granulated vegetable stock
  • basil
  • sugar or honey
  • Parsley
  • chili

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

WW-suitable and low in fat, quick preparation

Drain the tuna in a sieve, reserving 1 teaspoon of oil. Shred the fish with a fork, drizzle with lemon, and add pepper and salt. Cut the onion into small, fine halves and toss with the tuna for a while. In the meantime, cut the tomatoes into eighths, removing the seeds if you like or using them as well. This will make it a little more liquid. Mix with the chili and tomato seasoning and add the granulated stock. Mix with the corn and add the marinated tuna. Fold in lightly, but don’t over-mix. Season everything with 1 tablespoon of balsamic vinegar and adjust the seasoning as needed. Chopped basil leaves and parsley refine the salad. About 15 minutes before serving, stir in the frozen peas to keep them nice and crisp and green.
