Ingredients for 2 servings:
- 100 g fish (fine matjes fillets, smoked eel if possible)
- 2 radishes, round white radishes, finely sliced,
- 1 tomato(s)
- ¼ cucumber(s) with peel for the look
- 1 tsp sour cream, no more is needed
- 1 pinch(s) of sugar
- 1 tsp mustard (Dijon mustard)
- 1 tsp horseradish (creamed horseradish)
- ¼ garlic clove(s), better just a touch, if you like
- 1 chili pepper(s), red or piri-piri, finely chopped
- salt and pepper
- Caraway powder
- Dill, chopped
- Chives, in rolls
- Parsley, chopped

Cut the herring into thin strips, then dice them if desired. Peel the radish, slice it, and then cut it into thin strips. Finely dice the tomato and cucumber. Whisk the sour cream with all the seasonings except the herbs. Gently mix with the prepared ingredients and serve sprinkled with the herbs. Season to taste. This is a WWII-friendly dish, 3.50 pence per person, and you can add more herring and cream if desired!
