Ingredients for 4 servings:

- 560 g leaf spinach, cleaned, chopped
- 2 tsp butter, semi-skimmed
- 2 tbsp flour
- 240 ml skimmed milk
- ½ shallot(s), grated
- 2 tbsp Parmesan, grated, optional
- 1 tbsp crème fraîche, low-fat
- pepper
- nutmeg

Bring salted water to a boil. Add the spinach and a pinch of sugar, cover the pot, and simmer over low heat for 5 minutes until the spinach wilts. Drain well, wrap in kitchen paper, and squeeze dry liquid. Set aside. Melt the half-skimmed butter in a small saucepan over low to medium heat. Add the flour, stirring constantly, and sizzle for 1 minute. Whisk in the milk and grated shallot; bring to a boil and cook, stirring constantly, for 1 to 2 minutes until the sauce thickens. Stir in the cheese and crème fraîche and season with pepper and nutmeg. Add the spinach to the sauce and heat through. Serve immediately. Per serving: 91 kcal, 3 g fat, 10 g carbohydrates, 7 g protein, 4 g fiber.
