Ingredients for 4 servings:
- 3 garlic cloves
- 100 g onion(s), halved
- 25 g olive oil
- 1 bell pepper(s), orange or yellow, cut into thin strips
- 200 g zucchini, halved, sliced
- 250 g eggplant(s), diced
- 4 tomatoes, firm, quartered
- 1 tbsp herbs de Provence
- 1 tsp salt
- ¼ tsp pepper
- 1 pinch(s) of sugar

For the Thermomix TM31 or TM5: Place the garlic and onion in the mixing bowl and chop for 3-4 seconds/speed 5. Add the olive oil and sauté for 3 minutes/Varoma/speed 1. Add the prepared vegetables, herbs, and spices and cook for 20 minutes/100°C/reverse/gently stir. Note: Serves 4. One serving contains approximately 113 kcal, 7 g fat, 3 g protein, and 9 g carbohydrates.
